I am nuts about coconut because it was one of the main parts of my yeast and parasite program that helped me slim down and get healthier. I still use it daily to maintain my figure and avoid colds/flu's and for a variety of other health benefits. It is truly one of nature's miracle foods.
I'm a big fan of the So Delicious brand Unsweetened Coconut Milk. There are only 50 calories in one cup. It's fantastic in Coffee and Smoothies.

THE MIRACLES OF COCONUT OIL
So much has been said against saturated fat over the years that the idea that all saturated fats are harmful is firmly entrenched in our minds.It may come as a surprise to you to learn that saturated fats aren’t that bad and at least some can promote better health. There is one unique group of saturated fats that provides health benefits far beyond those of most all other fats. This class of saturated fats is known as medium-chained fatty acids (MCFA), also called medium-chained triglycerides (MCT).
Both saturated and unsaturated fats in our foods are composed almost entirely of long-chain fatty acids (LCFA). As the name implies, LCFA form relatively long molecules. Medium-chain fatty acids (MCFA), on the other hand, are much shorter. The length is important, because our bodies metabolize fats differently depending upon their size. Only a very few foods contain any appreciable amount of the medium-chain fatty acids. By far the richest source of MCFA is found in the tropical oils and particularly coconut oil.
Researchers have discovered a multitude of health benefits associated with the medium-chain saturated fatty acids in coconut oil. *Eat 3 1/2 Tablespoons of Coconut Oil per day.Don't be freaked out by the calories in coconut oil. It will be burned for energy by your liver and will boost your metabolism. It can be used like an oil or spread.It can even be taken straight. Coconut Oil can also be taken from coconut milk,shredded coconut and fresh coconut.
Coconut milk can be put in teas or coffee (try not to drink coffee) and it can be diluted to make milk for use on cereal. I was afraid to ingest this much in the beginning because I didn't trust that ingesting fat wouldn't make me fat. In the 1990's the craze was low-fat and I still had that belief ingrained within me. I am no longer afraid to do the 3 1/2 tablespoons per day now since my body feels great when I do. I do recommend starting with one Tablespoon the first day and then working up to the 3 1/2 within one week. Always begin slowly when you try a new supplement to assure that your personal chemistry works well with the supplement.
3 1/2 Tbs coconut oil:
= 7 oz. Fresh coconut meat (1/2 coconut)
= 2 3/4 dry shredded coconut
= 10 oz. Coconut milk.
I break up the dosage throughout the day between the milk, oil (in cooking) and raw food bars.
One of my favorite meals is red or green Thai curry with tofu and vegetables, served with a side of brown rice. It is made with coconut milk and is a little spicy.

It has been recently discovered that the medium chain triglycerides, found in high amounts in coconut oil, appears to be very beneficial for Alzheimer's patients when taken as a supplement.
Make your own non-toxic deodorant with coconut !
1/4 cup baking soda 1/4 cup arrow root powder OR corn starch ~5 tablespoons coconut oil
1. Mix baking soda and arrow root powder (or corn starch) in a bowl with a fork.
2. Begin with about 4 tablespoons/one-fourth cup of coconut oil and add the coconut oil to the baking soda mixture, working into a paste.
The deodorant should have a play-dough like consistency and will be softer or harder depending on its temperature. You can put the deodorant into a small container with a lid, or into an empty stick deodorant dispenser if you have one. Deodorant may harden after putting it into a container.
